Whether you are eating less meat to save $$ or just to be healthier, we've played around with some products from Thai Kitchen (we aren't shilling for them, their products are just easy to find at our local Meijer or Kroger- and we are all about easy) and came up with this tasty and healthy dish. You'll need:
2 tablespoons of Thai Kitchen Green Curry Paste
1 can "lite" Thai Kitchen coconut milk
1 15.5 oz can cannellini beans (drained and rinsed)
1 cup frozen peas
1 8 oz. package sliced mushrooms
Jasmine rice
- Steam 2 cups Jasmine rice
- In large skillet, combine curry paste w/can of coconut milk. Bring to boil.
- Reduce heat, add mushrooms, simmer and stir. Cook until the mushrooms are at your desired tenderness.
- Put in the frozen peas (they won't take long to cook)
- Add can of cannellini beans
- Ladle over Jasmine rice and enjoy!
